St. Patrick’s Day is a week from today, what?! I feel like Valentine’s Day was yesterday. And Christmas was the day before that. Time flies…
Anyways, we are having some company over on St. Patrick’s Day — and Hudson and I have been trying to eat healthy lately — so last week I was browsing Pinterest for green, healthy St. Patrick’s Day recipes. Now, maybe I just wasn’t searching the right things, but I literally COULD NOT find a single healthy recipe for St. Patrick’s Day. That is, unless you consider cookies, cupcakes, and rice krispie treats made green with food coloring healthy ;)
So instead, I did a little brainstorming and came up with a green, EASY, and healthy St. Patrick’s Day meal on my own — and thought I’d share the recipes with you today so that you can make the same meal for St. Patty’s Day next Monday!
Pesto Chicken
4 boneless, skinless chicken breasts
4 tbsp pesto
1. Preheat oven to 400.
2. Wash chicken, dry with a paper towel, and cut off any extra fat.
3. Place chicken in baking dish.
4. Spread 1 tbsp pesto over each chicken breast.
5. Bake for about 30 minutes, until done.
6. Make everything else in the meantime! :)
Green Apple & Lime Salad
1 bag spinach leaves
2 green apples
2 limes
1. Wash everything.
2. Core apples and chop slices into thirds.
3. Peel and dice limes.
4. Mix together.
Three Cheese Spinach Tortellini
1 package three cheese spinach tortellini
water
1. Buy and follow package instructions. I got mine at Giant and it was wonderful & delicious!
Grilled Asparagus
1 lb fresh asparagus
1 tbsp olive oil
salt & pepper
1. Trim asparagus spears.
2. Coat with olive oil and season with salt & pepper to taste.
3. Grill over high heat for 3 minutes, or until desired tenderness.
